Akki Roti

Akki Roti is an unleavened flatbread made from rice flour. Akki is the word for rice in Kannada so Akki roti translates to roti made with rice. It is very similar to the Thalipeeth made in Maharashtra but made from rice flour. This roti is popular in Karnataka. Maharashtra and Karnataka share a border and you can see the similarities reflected in the cuisine.

Vishesh Tippani / Additional Commentary

You can add any grated vegetables like carrot, gourd, etc to this Roti. Some recipes call for fresh dill leaves, but if there is one herb I cannot stand it's dill so I skipped it. If you are familiar with making Bhakris this should be easy. Like Bhakris, you have to pat these down so I used parchment paper to pat the Rotis and then transfer them to the tawa

What do I need?

  • 1 C Rice Flour

  • 1 tsp cumin seeds

  • 1/2 inch ginger

  • 2 green chilies

  • Some chopped cilantro

  • 3-4 curry leaves

  • Freshly grated coconut (optional)

  • A little salt to taste

  • A pinch of turmeric (to add some color for the Rotis, optional)

  • Water to make the dough

  • Ghee/oil for making the Rotis

How do I make it?

  • Mix all the dry ingredients. Finely chop ginger, chilies, coriander, curry leaves ( I used a blender to blend them)

  • Add water and make a soft dough

  • Divide into equal-sized portions (about 3 ) and let rest for another 10 minutes

  • Take a Tawa (pan) and apply some oil on the surface. Take one of the dough balls and flatten it out on the Tawa. Make holes to let the oil seep in. Add a little oil and cover it and cook till you hear the water sizzling on the pan

  • Flip the roti and cook uncovered on the other side. Use oil/butter as required.

  • Serve hot with chutney!

  • Let the pan cool down and then pat another one or you can pat the roti on a ziplock or parchment paper and then transfer to the pan.

Keep calm and call mom tips:

  • Your dough should be soft. If you see cracks appearing on the roti add a little water or add a little oil and cover when cooking the roti

  • Serve hot as these tend to get a little tough when cooled down

Accompaniments

  1. Coconut chutney

  2. Dahi mixed with dry chutney

  3. Podi with oil
