Methi Na Thepla / Methi Paratha

Thepla is a Gujarati flatbread and so - Methi na Thepla is a flatbread made with Methi (fenugreek) leaves. This is a very healthy breakfast recipe served with yogurt, achaar, or chutney. Every family has their own recipe for making theplas. I use the one below as I like the addition of yogurt to the dough. Keeps the theplas soft for a longer time.

Theplas can be kept without refrigeration for a few days and hence make a great travel companion. We use to make rolls out of these with dry peanut chutney and carry them with us on long road trips. Carrying homemade food like puris, theplas was so common when we were growing up. Almost everyone you traveled with on the train or bus would have food and would be willing to share it with others.

 

What do I need?

  • 1 C Whole Wheat Flour

  • 1/4 cup besan

  • 1 tbsp. maida (all-purpose flour)

  • A little salt ( 1tsp) to taste

  • 1 bunch methi leaves (washed and cleaned)

  • 2 tbsp. oil

  • 1/4 cup fresh Coriander leaves

  • 2 green chillies

  • 1-inch ginger

  • 12 cloves of garlic

  • 1/2 tsp red chili powder

  • 1/2 tsp turmeric powder

  • 1/2 tsp coriander powder

  • 1/2 tsp ajwain

  • 1/4 cup yogurt

How do I make it?

  • Put all ingredients in a food processor and make a smooth dough

  • Add a little water if the dough is dry

  • Cover and rest for 15 minutes

  • Knead the dough again. Divide into equal-sized portions (based on how big you want your theplas)

  • Make a round ball of the dough, dip into some flour and then roll it out into a disc

  • Heat a pan and when heated add the rolled-out disc and roast it. Add a little ghee on top and then flip the Thepla

  • Cook well till it is browned

  • Serve hot

Keep calm and call mom tips:

  • Do not rest your dough for a long time as the methi leaves will release water and make the dough sticky. If your dough is sticky add a little more whole wheat flour and knead it again.

  • Methi leaves have a lot of mud/dirt on them. To clean them, wash them in running water and put them in a container that is deep. Add water. Methi leaves will float to the top and the dirt will settle down. Rest for a while till the dirt settles, then slowly remove the leaves and wash them again.

  • If you are vegetarian, you know how hard it is to find good vegetarian food across the globe. These are great to carry with you on long road trips.
