Missi Roti is a flatbread that is common in North India. I used to think of it as a Rajasthani dish but it is also common in Punjab. This is a very versatile roti and you can use your own combination of Besan (Chickpea flour) and Whole Wheat flour. You can also add left over dal to it and drop the Besan.

Missi Roti is your BFF in the Roti land. It is very forgiving and you can rarely go wrong with this Roti. It is extremely versatile. There are a lot of variants to it. It reminds me of the Maharashtrian Thalipeeth. Thalieepth is something that you can make with all your leftover dals and subzis and it will still taste great!
I have dropped the Besan and added some left over Toor dal to it.
I also add a little bit of Kasuri Methi to enhance the flavor.
This one also needs to be served with, as we say, maa-ka-pyaar (mother's love aka lots of ghee)
If you like Anar Daana, you can ground it and add to the roti.
What do I need?
1 cup Wheat Flour
1 cup Besan (or left over dal)
1/4 cup finely Chopped Onion
1 tsp Ginger Paste
2-3 Green Chillies ground to a paste
1-2 tbsp. Cilantro leaves (finely chopped). I use the Cilantro stems too (blend chilies, ginger and chilies into a fine paste)
1 tbsp. Coriander powder
1 tsp Jeera powder
1 tbsp. Kasuri Methi
1 tsp Turmeric powder
1 tsp Chaat Masala (optional)
Salt to taste ( I used 2 tsp)
Water
How do I make it?
Mix flour and Besan and all the ingredients.
Add a little water at a time and make dough. You need patience here so be careful to not add too much water. The quantity of water depends on the amount of dal you are adding.
The dough should neither be too thick nor too soft. It should have medium consistency.
Cover and let it rest for 30 minutes.
Divide the dough into equal pieces and roll each one into a small ball.
Roll out gently with a rolling pin.
Heat a pan and when hot, roast the Missi Roti. Add a good amount of ghee to enhance the flavor. Roast both sides of the Roti.
Serve hot with yogurt/raita, chutney or any other curry.
